    Here is my favorite way to cook green tomatoes. I got this recipe from about.com
    Green tomato casserole with breadcrumbs, serves 6 to 8, southernfood.about.com
    7 to 8 large green tomatoes
    2/3 cup fresh grated Parmesan cheese, o more to taste
    1 1/3 cups fine dry bread crumbs, o Italian seasoned breadcrumbs
    1 teaspoon salt
    1/4 teaspoon ground black pepper
    1 tablespoon fresh chopped parsley
    3 tablespoons butter, cut into small pieces
    Heat oven to 350°. Butter a 2-quart baking dish or spray with nonstick cooking spray.
    Slice the tomatoes into rounds about 1/2- to 3/4-inch thick.
    Combine the Parmesan cheese, bread crumbs, salt, pepper, and parsley.
    Arrange half of the tomatoes in the baking dish. Sprinkle half of the Parmesan mixture over the tomatoes. Top with the remaining tomato slices and sprinkle with the remaining Parmesan mixture.
    Dot evenly with the butter.
    Bake for 45 to 55 minutes, until tomatoes are tender, and the casserole is browned and bubbly.

    I cook almost every night. I try different recipes and go for a meat ( usually chicken, fish, ground round or sirloin, or pork of some kind), starch ( potato, pasta, rice, orzo, or farro, and a vegetable, fresh, frozen, or canned. Last night we had fish, that I ground up stale preztels and Ky Kernals flour to coat, green fried tomatoes from the garden, corn on Cobb from friends garden, and a salad with just lettuce, tomato, Cucumber, onion, green pepper, and avocado. It was a lot to eat. But no starch that really fills you up!

    Sounds good. probably could use w/red tomatoes.

    Hi Poinciana,
    The tomato jam I made was made w/raspberry Jello. You're right. It didn't feel too good to get a chip stuck in my throat. It's happened before. I'm doing good. Thank you for the recipes. He said it was his own salsa. It's w/red tomatoes and hot peppers and cilantro, etc. Jean Marie

    Today, I am going to make this casserole with green tomatoes, the last zucchini, and thinly sliced onion. I can tomatoes, today i am canning 6 quarts of tomato sauce which will make the grand total so far at 30 quarts. Hope to be able to can a total of 48 quarts which will see my family through the winter and right up to next year's canning season. Having fun.
