    In your first post, the mats with the blue border look like Silpats. They go on a cookie sheet and you bake the cookies on top of them. Makes clean-up easier and the cookies come off clean (if you're baking a crumbly/soft type cookie or a cookie that likes to stick to the pan). I've used them and they're wonderful.
    In your second post, these mats look like they'd be put on top of a rack to protect the rack and oven from anything that might bubble over, like a casserole - again, easier clean up. The ones with the holes in them might be for a more even cooking process, but I really don't know about those.
    In your last post, the Cook's Essentials round pads look like they could be used as a trivet to protect your counter or as hot pads.
    However, I'm at a total loss for the T shaped things. The textured things in your first post might be for putting under a pan/cookie sheet to create a more even cooking temp, but that's a guess.

    The first 3 pictures I posted are called 'Fat Away Mats' The trays are 'boards'. The mats fit inside the trays. The red ones on the first 3 pictures I posted are bigger than the tray so don't know what we would put them on, maybe a cookie sheet.

    That's not a "T". It's a capital "C", but I don't know what it is used for.

    Thanks Annie69. You're right it's a C. I thought it was a T too but didn't know how to describe the rest of it. I've been googling it and the closest I come to is a block letter C stencil or a block letter C felt patch even though I Google white metal block letter C I get a galvanized metal 3D letter C.
