    I made some lemon cookies from a recipe I found they where pretty good, reminded me of Madeline's almost. my husband suggested making them into sandwich cookies with apricot filling, so I made a few that way and have to say they tasted delicious.

    LEMON WAFERS

    1C butter softened
    3/4C sugar
    1 egg
    2 egg whites
    1 tbs Lemon extract ( if u like more lemony taste add a bit more)
    1C flour

    Cream butter, sugar until creamy add egg, egg whites and lemon extract, beat until smooth then add flour until thick batter forms

    Spoon into pastry fitted with large round tip, pipe heaping teaspoonful of batter 3 inches apart onto parchment paper lined baking sheet.

    Bake 375 degrees for 7-9 minutes or until edges are lightly browned.

    I sprinkled some white sugar on the second Bach being I thought they needed a little more sweetness to them and when all where done i dusted them with powdered sugar. DELISH!

    Sorry to come late to the party but I missed this thread. Yes, I am on my way to pick up MaryJane and Landon and we will be there soon and eat some of those cookies with a glass of milk. YUM!!

    Talking Did some body say COOKIES?????

    My Grandmother used to make the same type of cookie/candy but used Corn Flakes and colored them dark green then placed 1 1/2 to 2 inches of the flakes onto wax paper while warm and put 2 or 3 Red Hots in the center of each so they looked like Holly! I Can Not Stop Eating them If I Take ONE BITE!

    I know. Dan, my husband, supervises all the cookie trays we give out, to make sure we don;t give too many of his favorites (all of them are) out. We give out at least 8 cookie trays. plus the trays we fill when we have company plus out sweet breads trays. I love the smell of my kitchen at Christmas. Judy
